Meatless Monday: Parmesan Baked Tofu with Burst Cherry Tomatoes + Rice Chopped Salad
Tuesday: Easy Grilled Halibut Skewers, Green Bean and Basil Salad with Balsamic Vinaigrette, Roasted smashed potatoes
Wednesday: Barbacoa-Style Grass-Fed Beef Tacos (slow cooker) + Creamy Cabbage and Avocado Slaw
Thursday: Grilled Chicken Sliders + Kale salad with creamy lemon dressing
Friday: Shrimp Lo Mein + sesame spinach salad
Saturday brunch: Overnight Steel Cut Oatmeal (make sure to prep these Friday night, and then add fresh fruit and/or nuts in the morning)
Sunday: Summer Pesto Mini Meatball Soup from How Sweet Eats + crusty bread
