I’ve been digging through the archives of the website lately because there are so many great recipes that should get some love!  Honestly though, sometimes I love a good no-cook snacky dinner in the summer with olives, cheese, bread and some garden tomatoes.  No shame in that!

For those of you who take my online monthly cooking class, check your emails for the Zoom link for July office hours coming up on Wednesday, July 24 at noon PST.  Come and hang out or bring any and all questions! Here’s your dinner planner for the week:

Meatless Monday: Southwestern quinoa salad and/or black bean taquitos

Tuesday: Salmoriglio on grilled halibut – this sauce works great on any seafood or veggie. Grilled veggies on side (I am making red peppers, onions, and zucchini)

Wednesday: Greek turkey meatballs from Quicker Than Quick– so many ways to serve these!  Kids love them in pita with tzatziki or pasta/spaghetti squash with tomato sauce doctored up with dried oregano and fresh mint + feta; or in a bowl with rice (add some dill – yum!) or cauliflower rice and roasted veggies; or on a Greek salad bowl

Thursday: The Greenest Leek and Spinach Cavatelli by Maddy DeVita. Serve with grilled chicken breast for protein + simple arugula and cherry tomato salad.

Friday: Marinated seared ahi, black rice or sautéed cauliflower rice, any raw or roasted veggies you have + a sauce/dressing (the Chinese chicken salad dressing from QTQ is amazing here!)

Saturday Brunch: Nectarine goat cheese salad, tomato, olive oil and salt on toasted ciabatta or other crusty bread

Sunday: curried chicken salad on lettuce cups, grated carrot salad with avocado (I know a lot of you are battling hot temps and are looking for no-cook dinners!)
