Here’s you dinner planner for the week:
Meatless Monday: Baked Falafel + Fattoush served with pita bread
Tuesday: Sheet Pan Fish & Chips + Classic Coleslaw
Wednesday: Roasted Tomato Pasta + Spicy Caesar Salad with Toasted Breadcrumbs with chickpeas for extra protein
Thursday: Crunchy Coconut Chicken from Delish with Pineapple Salsa (using this recipe), jasmine rice, Grilled Zucchini (drizzle with olive oil, lemon & serve with some mint)
Friday: Shrimp and melon โcevicheโ (multiply this to serve as a main dish and serve with large lettuce leaves), if you need something extra, I love the idea of a baking sheet of simple nachos!
Saturday brunch: Blueberry-Banana Spelt Bread
Sunday: Grilled Flat Iron Steak + Roasted summer vegetable tian served with a Hibiscus Mocktail
