I hope everyone had a wonderful holiday weekend! Hubs and I had such a nice time in Montecito staying with friendsโit was the perfect little reset. This weekend weโre back to hosting, and Iโm so excited to welcome my cousin and her husband from New York. Iโve got some easy, crowd-pleasing meals planned that I can prep ahead so I can actually enjoy our time together. I hope this weekโs dinner planner helps you do the same, whether youโre entertaining or just easing back into routine.
Here’s your dinner planner for the week:
Meatless Monday: Vegetarian โBLTโ Sandwich from Cookie + Kate, Watermelon and Tomato Salad with Feta and Mint, roasted sweet potato fries
Tuesday: Veggie Stuffed Grilled Portobello Mushrooms p. 284 from Quicker than Quick + green salad with everyday salad dressing #1
Wednesday: Greek Shrimp with Tomatoes and Feta, Quick Blistered Green Beans, cooked/steamed rice (or cauli-rice)ย
Thursday: Grilled Summer Salad with Chicken and Spicy Cashew Dressing
Friday: Tuna โcevicheโ with avocado p.255 from Quicker than Quick served with tortilla chips or plantain chips, Arugula and cantaloupe salad with grilled halloumi
Saturday brunch: Breakfast Nachos + Watermelon agua fresca
Sunday: Simple grilled or roasted chicken, Grilled Bell Peppers Recipe (with Burrata), Herbed Summer Squash and Potato Torte
