I hope everyone had a wonderful holiday weekend! Hubs and I had such a nice time in Montecito staying with friendsโ€”it was the perfect little reset. This weekend weโ€™re back to hosting, and Iโ€™m so excited to welcome my cousin and her husband from New York. Iโ€™ve got some easy, crowd-pleasing meals planned that I can prep ahead so I can actually enjoy our time together. I hope this weekโ€™s dinner planner helps you do the same, whether youโ€™re entertaining or just easing back into routine.

Here’s your dinner planner for the week:

Meatless Monday: Vegetarian โ€œBLTโ€ Sandwich from Cookie + Kate, Watermelon and Tomato Salad with Feta and Mint, roasted sweet potato fries 

Tuesday: Veggie Stuffed Grilled Portobello Mushrooms p. 284 from Quicker than Quick + green salad with everyday salad dressing #1

Wednesday: Greek Shrimp with Tomatoes and Feta, Quick Blistered Green Beans, cooked/steamed rice (or cauli-rice)ย 

Thursday: Grilled Summer Salad with Chicken and Spicy Cashew Dressing

Friday: Tuna โ€œcevicheโ€ with avocado p.255 from Quicker than Quick served with tortilla chips or plantain chips,  Arugula and cantaloupe salad with grilled halloumi 

Saturday brunch: Breakfast Nachos + Watermelon agua fresca

Sunday: Simple grilled or roasted chicken, Grilled Bell Peppers Recipe (with Burrata), Herbed Summer Squash and Potato Torte
