Happy Weekend! I wanted to mention to any LA locals that I am teaching a public class on Thursday, May 4th at Elizabeth Lamont in Palisades Village!  The menu is “Coastal Italian.” Click here for more information and to reserve your spot. Here’s your dinner planner for the week: 


Meatless Monday: Asparagus soup, swiss chard frittata 

Tuesday: Deconstructed salmon sushi bowls

WednesdayGluten-free vegetarian meatballs with lentils and quinoa from feed me Phoebe

Thursday: Veggie and bean burrito bowls with cilantro-lime rice and Mexican Sautéed Greens  (roast whatever you have!), avocado or guacamole and/or salsa

Friday: DIY Pizza night! I’ve been loving the Banza chickpea pizza crust.

Saturday brunch: Strawberry Scones (best made the day of)

Sunday: Grilled skirt steak, roasted cauliflower, sautéed greens, romesco sauce.  (I might make a little rice to go with it all. If you’re plant based, add some cooked legumes like white beans to your sauteed greens.)



Here’s what you can do in advance if it helps you: 


Wash greens

Make stock

Cook vegetables for frittata. You can also make the entire frittata and reheat the next day. 

Cook lentils and quinoa for veggie meatballs


Assemble veggie meatballs


Cook rice for burritos


Make romesco sauce 


Marinate skirt steak
