I know some of you will be celebrating Passover on Monday, April 22nd.  I will be posting a Passover recipe round-up on Wednesday to give you some more ideas since this week’s dinner planner doesn’t cover the holiday.  I had a really fun IG live this past Monday with my friend and interior designer extraordinaire, Nathan Turner, and I *might* have another special guest join Hubs and me this coming Monday.  Stay tuned!  Here’s your dinner planner for the week:

Meatless Monday: Asparagus soupswiss chard frittata

Tuesday: DIY Pizza night! You can use something like a Banza chickpea pizza crust or we have been loving the dough from my local pizza place, Pitfire. I like to load up my pizza with grilled veggies. Check out my newsletter for a pizza crust sandwich recipe I can’t get enough of!

Wednesday: Spatchcocked Honey-Lemon Glazed Chicken + an additional green veggie like asparagus or sauteed kale.

Thursday: Gluten-free vegetarian meatballs with lentils and quinoa from Feed me Phoebe; serve over pasta or a pasta alternative, and an arugula salad with everyday salad dressing #1 

Friday: Fish in parchment with fennel, citrus and olives, rice pilaf, roasted artichoke hearts (frozen/defrosted or jarred – pat dry, toss with olive oil, salt and pepper and roast at 400 for 25 minutes)

Saturday Brunch: Vegan chickpea “tuna” salad 

Sunday: Veggie and bean burrito bowls with cilantro-lime rice and Mexican Sautéed Greens  (or roast whatever you have!), avocado or guacamole and/or salsa
