My pasta-pizza-formaggio-vino-gelato vacation is over. It was the best trip ever and I am so grateful to my mom for bringing us all together for such an amazing time. I will share details in my newsletter soon. My Picky is back at college and we are empty nesters once again. In the meantime, I’m back in the kitchen and trying to be on a regular eating plan again that doesn’t involve fried pizza dough and prosciutto! Here’s your dinner planner for the week:
Meatless Monday: Spaghetti squash with kale and chickpeas, sautéed mushrooms
Tuesday: Roasted fish with chermoula, Moroccan roasted carrots, and a fresh green salad
Wednesday: Greek sheet pan chicken with lemon and potatoes, served with garlicky broccoli
Thursday: Beef bulgogi lettuce wraps from whatsgabycooking, serve with asian noodle salad (kelp noodles work well too)
Saturday Brunch: Savory Whole Grain Ricotta Pancakes topped with 5-minute cherry tomato sauce
Sunday: Lentil and Rice-stuffed Baby Eggplants, simple side salad
