Here’s your dinner planner for the week:

Meatless Monday: Creamy tomato soup from QTQ, grilled cheese or avocado toast

Tuesday: Shrimp and mixed vegetables with coconut-basil sauce, brown rice or cauliflower rice (you can rice lots of different vegetables – see Quicker Than Quick for tips!)

Wednesday: charred eggplant salad, chicken paillard with arugula

Thursday: Roasted Vegetable and Black Bean Enchiladas Verdes and a green salad (you can easily add leftover chicken or shrimp to the enchiladas) 

Friday: slow roasted Copper River Salmon (if you see this salmon, splurge!  It’s only in season for a very short time and it’s amazing!) minted sugar snap peas, green salad

Saturday brunch: I love this- spread hummus on the bottom of a platter or shallow bowl.  Top with California Greek salad.  The dressing mixes with the hummus and gets creamy and crazy good.  You will freak out.

Sunday: Thai steak salad (I have done this with salmon and chicken, as well, and tofu is a great swap too!)

 

Here’s what you can do ahead if it helps you: 

Sunday: 

Cook brown rice

Cook white beans for tomato soup if making from scratch

Monday: 

Cut vegetables for shrimp dish

Wednesday: 

Make enchilada sauce

Roast vegetables for enchiladas
