Here’s your dinner planner for the week:

Meatless Monday: Hearty vegetable soup with kale pesto (p. 96) from Kitchen Matters, pizza muffins also from Kitchen Matters but that recipe is also accessible here.

Tuesday:  Turkey and pinto bean sloppy joes (I love this served over rice, quinoa or cauliflower rice), grated carrot salad 

Wednesday: kale salad with creamy lemon dressing served with grilled or roasted fish.

Thursday: Chicken shawarma burgers from Quicker than Quick, arugula salad with pine nuts, radishes, cucumber and everyday salad dressing #1

Friday: Spinach Risotto and sautéed shrimp, sautéed sugar snap peas with mint (olive oil, garlic salt and pepper + mint at the end)

Saturday brunch: Savory dutch baby pancake with spinach and gruyere

Sunday: Spring green minestrone, hen of the woods mushroom toast – Either of these is great with a fried or soft boiled egg.

 

Here’s what you can do in advance if it helps you: 

Sunday: 

Make pesto

Cook beans if making from scratch

Make salad dressing

Wash greens

Make dry mix for muffins. You can also make the muffins now and reheat the following day. 

Wednesday: 

Make chicken shawarma mixture

Thursday: 

Trim sugar snap peas
