Happy Weekend! Big Hubs update: he is out of his boot and walking pretty well, fortunately! Not quite ready for pickleball, but maybe in a few weeks. Just a reminder that the April class is up and ready for viewing if you are part of the online cooking class community. Everyone here eats differently and I am not going to tell you that there is one “best” diet because there are many ways to eat healthfully. Always feel free to leave a comment at the bottom of a recipe if you need a swap. Most of the time, I have a good suggestion! Here’s your dinner planner for the week:
Meatless Monday: Red lentil dal served with rice + sauteed leafy green vegetable or roasted cauliflower
Tuesday: Roasted lemon-sumac chicken, miso roasted eggplant with pomegranate-tahini sauce + Flourless Chocolate Brownie Cookies for dessert!
Wednesday: Pasta with melted zucchini sauce made with a high-protein pasta and lots of Parmesan. I’ve been loving Kaizen! + arugula salad.
Thursday: Deconstructed salmon sushi bowls (you can use any type of fish, even canned, and clean out the veggie drawer)
Friday: Grilled skirt steak, roasted asparagus and potatoes, romesco sauce. If you’re plant-based, add some cooked legumes like lentils and make a bowl with the romesco and other ingredients.
Saturday Brunch: Savory muffins with roasted red pepper, spinach, and feta
Sunday: Spicy Moroccan Meatball Tagine from Hola Jalapeño
