It was such a special weekend with both of my girls home, my future son-in-law, and my mom all under one roof. The house is quiet now, but my heart is full after attending a beautiful bridal shower for Anna hosted by two of my dear friends that have known her since she was born.
And now I’m back to the kitchen! If you’re finding yourself in a bit of a cooking rut after traveling this summer or being out of a routine (or just need some fresh inspo!), the new August cooking class is now live—filled with simple, seasonal recipes to get you excited about cooking again!
Here’s your dinner planner for the week:
Meatless Monday: Creamy Pesto Spaghetti Squash from The Kitchn + simple tomato and peach salad with olive oil, balsamic, salt, and basil
Tuesday: Moroccan sheet pan chicken from QTQ, served with sautéed cauliflower rice or couscous
Wednesday: Deconstructed Salmon Sushi Bowls
Thursday: Mediterranean Skillet Chicken and Rice + grilled zucchini
Friday: Vietnamese Chicken Salad with Nuoc Cham Dressing (this is enough for a meal) but if you’re wanting something a little extra or have some veggies you need to use, you can pair it with Summer Rolls
Saturday brunch: Ricotta Cake Recipe with Fresh Berries
Sunday: Fajitas served with Guacamole with homemade tortilla chips, and/or Vegan Queso
