Happy Weekend!  I’m trying something new. Roasted Stuffed “Fondue” Pumpkin Recipe

Not all pumpkin recipes have to be sweet!  This Roasted Pumpkin Fondue is an old recipe from Gourmet Magazine that I made back in the day but shelved it because it was too rich and heavy.  My friend Katie Morford lightened it up and it’s even better than the original version!  Think soft and gooey cheese on the inside with cubes of whatever bread you like + tender pumpkin.  It’s comforting and delicious and could be a full meal with a simple salad on the side.  After shooting this with an amazing dark multi-grain, seeded bread, I realized that a lighter color bread looks more appetizing.  But this tasted phenomenal!Continue reading

No Bake Chocolate Peanut Butter-Oat Bars Recipe

I forgot how much I love a NO BAKE recipe!  No heating up the kitchen and practically instant gratification! Harissa Chickpeas and Vegetables with Dill Sauce Recipe

I get more requests for sheet pan meals than anything else!  I love them too.  I taught this one last year and I still make it regularly, varying the vegetables and even swapping in chicken or fish.  (See the bottom of the post for substitutions.) This recipe would be great for a weeknight, but also terrific for serving vegetarians, plant-based eaters, and omnivores who are happy to eat plant-based once in a while. Continue reading
