Dinner Planner – Week of January 20, 2025

We are still in the throes of LA wildfire recovery.  Thank you for all your prayers, beautiful messages of support, and more.  Los Angeles is in for a long recovery but I have renewed faith in humanity and the power of community.  My site was under planned construction the last 2 weeks.  It was supposed to take much less time, but multiple people who were working on the backend were impacted by recent events.  I appreciate your patience.  I have not forgotten about you! I will host live Office Hours on Wednesday, January 22 at noon PST for anyone in my online cooking classes who would like to join.  We don’t have an agenda.  We chat about whatever you want!  Look for the zoom invite in your email inbox.

Here’s your dinner planner for the week:


Meatless Monday: 
Collard Wraps with Peanut Sauce + sweet and spicy sweet potato wedges

Tuesday: Broccoli White Bean Soup + Vodka Sauce Parmesan Chicken Sliders

Wednesday: Kimchi Fried Rice topped with a fried egg or Crispy Baked Tofu + sesame roasted carrots (this recipe but swapping in carrots for cauliflower)

Thursday: Skillet Swedish Meatballs from The Defined Dish, Cauliflower mashed potatoes, sautéed spinach 

Friday: roasted salmon topped with Kiwi salsaCoconut riceRoasted Sesame-Ginger Brussels Sprouts

Saturday brunch: Healthy brown rice pudding topped with Almond Butter and fruit of choice 

Sunday: Cassoulet-Style Chicken and Sausage  + sautéed cabbage

I come from a large Italian-American family with 28 first cousins (on one side of the family!) where sit-down holiday dinners for 85 people are the norm (how, you might ask – organization! But more on that later …).

Some of my fondest memories are of simple family gatherings, both large and small, with long tables of bowls and platters piled high, the laughter of my cousins echoing and the comfort of tradition warming my soul.
