Los Angeles is in for a long recovery but I have renewed faith in humanity and the power of community. My site was under planned construction the last 2 weeks. It was supposed to take much less time, but multiple people who were working on the backend were impacted by recent events. I appreciate your patience. I have not forgotten about you! Here’s your dinner planner for the week:
Meatless Monday: Collard Wraps with Peanut Sauce + sweet and spicy sweet potato wedges
Tuesday: Broccoli White Bean Soup + Vodka Sauce Parmesan Chicken Sliders
Wednesday: Kimchi Fried Rice topped with a fried egg or Crispy Baked Tofu + sesame roasted carrots (this recipe but swapping in carrots for cauliflower)
Thursday: Skillet Swedish Meatballs from The Defined Dish, Cauliflower mashed potatoes, sautéed spinach
Friday: roasted salmon topped with Kiwi salsa, Coconut rice, Roasted Sesame-Ginger Brussels Sprouts
Saturday brunch: Healthy brown rice pudding topped with Almond Butter and fruit of choice
Sunday: Cassoulet-Style Chicken and Sausage + sautéed cabbage
