    Hi Pamela, I’ve followed this recipe before and love it…it truly is a “no fail!” I wondered what your opinion is on using ghee as a replacement for butter for the outside of the chicken. I only ask because I happened to get a jar of ghee from Thrive Market (another great resource I learned about on your site!) and am learning how work with it. Very new to ghee so I thought I should ask before attempting this! ๐Ÿ™‚

      Hey — I’ve never tried ghee rubbed on chicken. The flavor is stronger than butter, much more nutty. But I think it would work. Try scrambling eggs in ghee to get an idea of the flavor. You can’t sub it for butter in baking, though.

    Made this tonight and it was so good! The onions carmelize and the chicken is super juicy! My kids loved it too. I didn’t get to prep it early and it still turned out great. This is so much better than the roasted ones at the market!!!
