If you have any kids or grandkids graduating from college or high school, congratulations!  This is a very exciting time for so many kids and their families.  My son just finished his sophomore year of college and it is speeding by.  This is also a fun time of year because it’s close to the unofficial start of the summer season.  I entertain much more at home after Memorial Day and I am already getting my menus ready!  Here’s your dinner planner for the week:

Meatless Monday: Vegetarian larb p. 283 from QTQ, served with lettuce leaves or black rice or both!

Tuesday: Roasted Copper River Salmon with Pineapple Salsa (if you see this salmon, splurge!  It’s only in season for a very short time and it’s amazing! Roasted Green Beans and Shallots with Lemon and Thyme (I’ll skip the thyme), green salad

Wednesday: Slow cooker barbacoa tacos + all the fixings! I always serve a vegetable with every meal, so I’ll probably saute some bell peppers and onions.

Thursday:Shrimp with Tomatoes White Beans and Spinach, rice or garlic toast

Friday: Melissa Clark’s Ratatouille Sheet Pan Chicken via Today Food

Saturday Brunch: Quinoa salad with cherries, almonds, celery, and pecorino + chickpeas for some extra plant-based protein. Easy Citrus Syrup is a natural on fruit, but it’s also fun mixed into to your favorite cocktail or mocktail recipes (think whiskey sours, old fashioneds, margaritas, and gin or vodka drinks) for a festive weekend drink!

Sunday: Zucchini-leek soup p. 96 from Quicker than Quick, store-bought pizza dough for a quick pizza or corn muffins and some manchego or Violife vegan feta
