Peach Salad with Chili and Lime

Ingredients

  • 1 red chili seeds and stem discarded, minced
  • 2 Tablespoons fresh lime juice about 1 lime
  • 2 Tablespoons unrefined cold-pressed extra-virgin olive oil
  • 6 ripe but firm peaches, sliced
  • 1 bunch of watercress tough stems trimmed*
  • 8 fresh mint leaves or more if you like mint
  • 1 teaspoon Maldon salt or any finishing salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • In a small bowl, whisk together chili, lime juice <g class="gr_ gr_49 gr-alert gr_gramm gr_inline_cards gr_disable_anim_appear Punctuation only-ins replaceWithoutSep" id="49" data-gr-id="49">and</g> olive oil.
  • Place peaches, watercress <g class="gr_ gr_42 gr-alert gr_gramm gr_inline_cards gr_disable_anim_appear Punctuation only-ins replaceWithoutSep" id="42" data-gr-id="42">and</g> mint in a <g class="gr_ gr_41 gr-alert gr_spell gr_inline_cards gr_disable_anim_appear ContextualSpelling ins-del multiReplace" id="41" data-gr-id="41">medium sized</g> bowl.
  • Pour the chili-lime mixture over the peaches and greens. Toss salad until dressing is evenly distributed. Sprinkle with a generous amount of flaky salt and black pepper.

*Can substitute arugula, if preferred.
