Ingredients

  • 1 cup raw walnuts or pecans
  • 2 cups crimini or baby portobello mushrooms wiped clean with a damp paper towel
  • 8 sun-dried tomatoes soaked for <g class="gr_ gr_43 gr-alert gr_tiny gr_gramm gr_inline_cards gr_disable_anim_appear Grammar only-ins replaceWithoutSep" id="43" data-gr-id="43">½</g> hour to soften if not packed in oil
  • 6 dates pitted and soaked for <g class="gr_ gr_44 gr-alert gr_tiny gr_gramm gr_inline_cards gr_disable_anim_appear Grammar only-ins replaceWithoutSep" id="44" data-gr-id="44">½</g> hour to soften
  • 1 teaspoon ground cumin
  • 2 teaspoons ground coriander
  • ½ <g class="gr_ gr_45 gr-alert gr_gramm gr_inline_cards gr_disable_anim_appear Grammar only-ins replaceWithoutSep" id="45" data-gr-id="45">teaspoon</g> sea salt
  • ¼ teaspoon chipotle pepper or less if you don’t want them spicy
  • 1 Tablespoon <g class="gr_ gr_39 gr-alert gr_spell gr_inline_cards gr_disable_anim_appear ContextualSpelling" id="39" data-gr-id="39">shoyu</g> or gluten-free tamari
  • Accompaniments: lettuce cups guacamole/avocado slices, red cabbage, radishes, salsa, cashew cream or sour cream

Instructions

  • Pulse all ingredients in food processor until coarsely chopped and well combined.
  • Spoon mixture onto lettuce cups and top with desired accompaniments.
