Strawberry-Ginger Shrub Recipe

Ingredients
  • Shrub Syrup:
  • 1 cup roughly chopped strawberries (about 6 large)
  • 1-inch piece of fresh peeled ginger, grated
  • ΒΌ cup pure maple syrup
  • 1 cup apple cider vinegar (preferably raw or unpasteurized)
  • Shrub:
  • 60oz chilled sparkling water (5oz per serving)
  • or
  • a little hard liquor such as vodka (add according to your taste and tolerance)
Instructions
  1. To make the syrup: In a medium bowl, mash the strawberries with the ginger and maple syrup, using a fork. Let sit for 15 minutes to allow the mixture to get juicy.
  2. Stir in the vinegar. Cover and chill for 3 to 5 days, to allow for the flavors to meld.
  3. Transfer syrup into a jar. Can be stored in the fridge for up to 1 month.
  4. To assemble shrub: for each serving, add 1oz shrub syrup to 5oz of sparkling water or alcohol. Add ice, if desired.
  5. Garnish with sliced strawberries, mint sprigs, edible flowers or candied ginger
