Cherry Cacao Acai Bowl Recipe

Ingredients
  • 1 packet frozen acai puree (break it into pieces to make it easier on your blender. I wrap it in a kitchen towel and hit it with a meat mallet a few times.)
  • 1 Tablespoon unsweetened peanut butter (crunchy or creamy)
  • 1 frozen or fresh ripe banana (break into pieces) or 1 heaping cup of frozen mango chunks
  • ½ cup fresh or frozen pitted sweet Northwest cherries, such as Bing or Chelan
  • 2 Tablespoons raw cacao powder
  • ¼ cup unsweetened, plain almond milk, preferably homemade
  • 1 handful spinach leaves (optional, but it will change the color of the mixture)
  • Toppings: granola, sliced bananas, fresh pitted cherries, coconut, chopped nuts, cacao nibs
Instructions
  1. Add all of the ingredients to a high-speed blender and puree until smooth, but thick. A Vitamix does this very easily, but if you have a standard blender you'll just have to scrape down the sides every so often or use a food processor. Pour into a bowl and add toppings of choice. Serve immediately.
Notes
You can add your favorite protein powder to make it a more complete breakfast.
