For my cooking class subscribers, I am planning to upload the October class video and recipes at some point on Tuesday. I have a new assistant, so please be patient in case we are a little late.  🙂 Look out for the email!  Wednesday night is the first night of Rosh Hashanah and my friend Lydia is generously hosting us. I have included some inspiration if you are still planning your menu.

 

Here’s your dinner planner for the week: 

 

Meatless Monday: Ricotta and Spinach Gnudi (recipe in the caption) with Tomato Sauce, chopped salad with chickpeas

 

Tuesday: Crispy Chicken Thighs with Herb Salad, roasted potatoes and cauliflower

 

Wednesday (first night of Rosh Hashanah): my friend Lydia is hosting us!  Last year, she made brisket, herb sweet and spicy salmon from Quicker Than Quick, and latkesOrange and Rosemary- Glazed Chicken, Lemon-Sumac Chicken, or Honey-Lemon Glazed Chicken, would also be perfect for the holiday.  I am bringing my #1 RH salad, roasted apple and delicata squash salad. The sweet noodle kugel is always a holiday favorite.  If you want to try your hand at making challah, here’s a recipe. I have so many lovely apple desserts like this a, apple crumble cake, grain-free apple cake, perfect apple pie, and apple fritter skillet cake. Here’s a Rosh Hashanah round up in case you need more inspo.

 

Thursday: Sheet Pan Meat Balls with Crispy Turmeric Chickpeas from Smitten Kitchen – these use ground turkey, but I am sure ground beef or turkey would be delicious! + roasted green beans with shallots and lemon

 

Friday: Red Thai Coconut Curry Shrimp, black or basmati rice (make extra rice for fried rice), steamed broccoli

 

Saturday brunch: Matcha Overnight Oats from my friend Valerie (1/2 C rolled oats +1 T chia seeds +
3/4 c plant milk + 1/2 c coconut yogurt or dairy yogurt + 1 t vanilla extract +1 T maple syrup (or sweetener to taste) + 1 tsp matcha + pinch of salt.  Stir and shake. Refrigerate overnight.

 

Sunday: Kimchi Fried Rice with shrimp or tofu, sauteed cabbage with a spoonful of chili crunch stirred in
