I hope you survived Halloween! As soon as I woke up the day after, I was already in Thanksgiving mode. I don’t like to announce my 2021 Thanksgiving ebook or Thanksgiving online class before Halloween because I think most people cannot focus on two holidays at once. But here we are, less than 3 weeks out, and it’s time to plan. I am offering my November class for a 1-time purchase, as opposed to subscribing for a 3-month minimum. The class video and recipes in the November 2021 class are all new and not even in the 2021 ebook (which has 13 more recipes than 2020.). Check them both out if you need some inspo! Now is also a good time to test new recipes that you are thinking about making on Thanksgiving. ;). Here’s your dinner planner for the week:
Thursday: Cod acqua pazza
Friday: Slow Cooker White Bean Soup with Sausage and Collard Greens (skip the sausage if you want and add more beans or a plant-based sausage like Field Roast)
Saturday brunch: savory muffins with spinach, roasted peppers and feta
Sunday: Moroccan chicken with dates, served with steamed white rice or couscous
Here’s what you can do in advance if it helps you:
Roast vegetables for lasagna
Make cauliflower ricotta if making from scratch
Measure dry mix for muffins
Cut parsnips into fries
Cut vegetables for cod acqua pazza
