Memorial Day weekend inspires gratitude for those who made the ultimate sacrifice serving our nation, protecting us, and our freedom.  I also appreciate a different kind of freedom today – freedom from the pandemic that made the last three years so challenging for all, and definitely more challenging for some. Thank you to all our first responders, health care workers and all essential workers who sacrificed so much and helped us weather the storm.  Enjoy the weekend, friends! Here’s your dinner planner for the week:

 

Meatless Monday: Veggie Stuffed Grilled Portobello Mushrooms p. 284 from Quicker than Quick, green salad with everyday salad dressing #1 

Tuesday: Baked chicken with tomatoes, olives and capers (I’m going to stir in a lot of spinach at the end and use cherry tomatoes to keep it light), roasted smashed potatoes

Wednesday: quinoa and jicama salad with avocado dressing, protein of choice (e.g. canned/jarred tuna or salmon, hard boiled egg, chickpeas, poached chicken)

Thursday: Pan-seared Moroccan Salmon, cauliflower rice, roasted carrots

Friday: Green goddess salad, serve with roasted fish.

Saturday brunch: cherry cacao açaí bowl

Sunday: Chicken Shawarma p. 188 from KM, with accompaniments (lavash or cauliflower rice, lettuce, tomato, cucumber, olives, tahini, yogurt). I have also used the spice mixture + 1 tsp garlic powder and 2 Tbs. olive oil on cauliflower florets and done a roasted cauliflower shawarma!

 

 

Here’s what you can do in advance if it helps you: 

Sunday: 

Make salad dressing

Wash greens 

Cook quinoa

Clean mushrooms 

Monday: 

Boil potatoes for roasted smashed potatoes

Wednesday: 

Make green goddess dressing

Friday: 

Make shawarma marinade
