Happy weekend!  I am back in the bootcamp saddle and started Plant Based 1.0 and Meal Planning | Meal Prepping this past week.  If you subscribe to my website, you will learn about when I launch new bootcamps and repeat previous ones. Here’s your dinner planner for the week:

Meatless Monday: Kung Pao Cauliflower served over rice or quinoa (don’t forget to include the peanuts or cashews for a little protein – otherwise you can swap in some tofu for part of the cauliflower)

Tuesday: Curried lentil, tomato and coconut soup

Wednesday: Lemon-thyme chicken, crispy stovetop Brussels sprouts (p.106) from KM

Thursday: Sweet Potato and Black Bean Tacos and green salad with radish, avocado and Homemade Ranch Dressing

Friday: Salmon with Quinoa and Parsley Vinaigrette from Williams-Sonoma, roasted rutabaga and carrots (just roast both together – keep simple or add the balsamic)

Saturday brunch: egg salad with grain-free seed crackers.

Sunday: Italian wedding soup, easy pizzas with naan bread or Banza frozen chickpea pizza crusts


Here’s what you can do in advance if it helps you: 


Break cauliflower into florets

Make sauce for cauliflower and store in a jar

Cook rice or quinoa

Wash greens


Trim brussel sprouts


Cook black beans if making from scratch

Make ranch dressing

Make parsley vinaigrette


Make seed crackers


Hard boil eggs
