Meatless Monday: Kung Pao Cauliflower served over rice or quinoa (don’t forget to include the peanuts or cashews for a little protein – otherwise you can swap in some tofu for part of the cauliflower)
Sunday: Italian wedding soup, easy pizzas with naan bread or Banza frozen chickpea pizza crusts
Here’s what you can do in advance if it helps you:
Break cauliflower into florets
Make sauce for cauliflower and store in a jar
Cook rice or quinoa
Trim brussel sprouts
Cook black beans if making from scratch
Make ranch dressing
Make parsley vinaigrette
Make seed crackers
Hard boil eggs
