Here’s your dinner planner for the week:

Meatless Monday: One-pot farro with cauliflower and golden raisins; I like this with shaved parmesan cheese and a simple green salad on the side.  But you can also add a fried egg on top.

Tuesday: Corn puree with mushrooms and burst tomatoes, seared scallops from QTQ

Wednesday: Greek sheet pan chicken with lemon and potatoes, served with garlicky broccoli

Thursday: Wild salmon burgers, parsnip fries (serve with buns and fixings or in a lettuce wrap), tomato salad (olive oil, salt and basil)

Friday: Southwestern quinoa salad, black bean or chicken taquitos (My family would probably not need both.)

Saturday brunch: grain-free sweet potato pancakes, sauteed apples (apples are coming into season!)

Sunday: Turkey bolognese spaghetti squash casserole, fresh green salad with everyday salad dressing #1

 

Here’s what you can do in advance if it helps you: 

Sunday: 

Cook one-pot farro

Wash greens

Make salad dressing

Monday: 

Sauté mushrooms and tomatoes for corn puree

Cut corn from cobs

Tuesday: 

Marinate chicken

Wednesday: 

Assemble salmon patties

Cook quinoa

Friday: 

Cook sweet potato for pancakes

Roast spaghetti squash and rake
