This is my son’s last week at home before we take him to college.  Yes, Mr. Picky is going to college.  I am literally teary-eyed as I type this.  Mr. Picky is my last child, and also a ray of sunshine and the kindest, most wonderful young man. I love having him around and truly enjoy his company and dry wit, his thoughtfulness and curious mind.  I am very excited for him to begin this new phase of his life, but I am going to miss him.  I just am.  Maybe I’ll convince him to partner with me on my IG live on Monday.

Meatless Monday: Corn and vegetable chowder (great with crispy bacon, cooked crab or shrimp or leftover shredded chicken), tomato toasts (grilled bread with raw tomato, olive oil, basil)

Tuesday: layered summer vegetable torte, grilled chicken or the simplest protein you desire

WednesdaySpiced halibut and lime skewers, mediterranean quinoa salad 

Thursday: Stir fried ginger beef with shiitake mushrooms, cilantro-lime rice

Friday: Herbed sweet and spicy glazed wild salmon p. 247 from Quicker than Quick, roasted green beans with shallots and lemon, sautéed cauliflower rice 

Saturday brunch: stuffed pita bread filled with your favorite ingredients (i.e. hummus, chickpeas, lettuce, onions, sprouts, tomatoes, olives, peperoncini, roasted red peppers)

Sunday: Grilled pizza, grilled romaine salads

 

Here’s what you can do in advance if it helps you: 

Sunday: 

Make dressing for torte

Cook quinoa 

Make dressing for quinoa salad

Make breadcrumbs for torte

Monday: 

Grill vegetables for torte

Wednesday: 

Wash and dry herbs (parsley, cilantro, mint)

Saturday: 

Make caesar dressing

  1. Aw Pamela! It is our daughter’s last week at home too. We are also feeling sad and excited like you are. She will be a 5 hour drive away and with no direct flights, flying takes the same. We’ll still have our own 7 year old Mr. Picky here. Mr “I want a quesadilla but with no cheese” “So you just want a tortilla” “yes”.

  2. My best advice when dropping off your son, is don’t go home immediately. As you are crying as you exit the campus, go somewhere, anywhere for a week, a few days, and then go home. It won’t be as sad as going home kid-less because you have had a nice diversion of your own. It is hard enough walking by their very clean room isn’t it? Now when he comes home on vacation you won’t care how sloppy or stuffy the room seems.
