I am visiting my older daughter in Dallas for a nice mother-daughter weekend!  I hope you all have a lovely Easter if you are celebrating.  If you are looking for some Easter menu inspiration, check out last week’s dinner planner!  Here’s your dinner planner for the week:

 

Meatless Monday: California Nicoise salad (with or without the tuna), check out this post for what to do with all the leftover eggs after Easter.

Tuesday: Instant Pot chicken tinga p. 199 served with baked pinto bean tostadas p. 277 from Quicker than Quick

Wednesday: Moroccan vegetable soup

Thursday: roasted fish with chickpea and deconstructed pesto salad (you can replace the tomatoes with artichoke hearts, either from a jar or frozen/defrosted and roasted at 400 degrees for 20 minutes with olive oil, salt and pepper). 

Friday: grilled lemon herb chicken with mint drizzle, simple arugula salad with lemon juice, olive oil, salt and pepper (add some nuts, cheese, or avocado if you want a little more substance)

Saturday brunch: savory muffins with roasted red pepper, spinach, and feta

Sunday: Turkey and brown rice stuffed bell peppers, clean-out-the-fridge green salad

 

Here’s what you can do ahead if it helps you: 

Sunday: 

Wash greens

Make salad dressings

Blanch green beans and shock in ice water

Monday: 

Make tostadas and store in a sealed container at room temp after they have cooled

Make stock if using homemade

Wednesday: 

Cook garbanzo beans if making from scratch

Thursday: 

Make mint drizzle

Friday: 

Make savory muffins

Saturday: 

Make turkey filling for peppers
