Dinner Planner: Week of November 20th | Pamela Salzman

Who’s excited??? ME!!  The girls are coming home from college and we are all so excited, especially Mr. Picky who I don’t think loves getting all the attention. 😉 I’m going to get busy on Sunday with my cranberry sauce and applesauce!

Meatless Monday: Naan pizzas topped with mozzarella cheese and sautéed spinach, mushrooms and thyme, drizzled with garlic oil, raw kale salad with citrus vinaigrette with shredded carrots, red cabbage, avocado and hemp seeds (you can add cooked quinoa to the salad if you want more protein)

Tuesday: Slow cooker chicken tacos (the easiest dinner on the planet!), guacamole, corn tortillas, store bought pico de gallo

Wednesday: Spice rubbed salmon, sautéed beet greens (or swiss chard) from my cookbook, brown rice

Thursday: Thanksgiving!

Friday: Thanksgiving leftovers or mix it up with some mashed potato croquettes, turkey quesadillas with cranberry salsa or cranberry-granola-yogurt parfait

Saturday: Stuffing and egg bake

Sunday: Turkey and lemon barley soup

Here’s what you can do ahead if you need:

Sunday

Make salad dressing for kale salad

Cook quinoa if you want to use it in the salad

Wash all your greens and herbs

Make taco seasoning and spice rub for salmon

Friday

Make turkey stock with your leftover turkey bones/carcass
