Dinner Planner - Week of January 22nd 2018 | Pamela Salzman

Happy weekend, friends!  Now that all of our favorite football teams are out of the playoffs, Sundays are just not as fun.  🙁  In other news, I am very excited to be speaking on Sunday, February 25th at the IACP conference in NYC.  My panel is about how to start a cooking class business.  It is a weekend full of great tours and panel discussions.  See this link for more info and if you were interested in attending, you can get $40 off a conference pass by using this discount code:  SPEAKER40

Here’s your dinner planner for the week:

Meatless Monday: whole-grain or gluten-free pasta or spaghetti squash (see this recipe for how to roast spaghetti squash) with vegan mushroom bolognese

Tuesday: slow cooker barbacoa-style grass fed tacos and creamy cabbage slaw

Wednesday: curried lentil, tomato and coconut soup from Bon Appetit

Thursday: tuna patties, superfood salad (minus the salmon) from my cookbook

Friday: cassoulet-style chicken and sausages, fennel and green apple salad

Saturday Lunch: shakshuka with whole grain bread

Sunday: caldo tlapeno soup, quesadillas, green salad with everyday salad dressing #2

 

Here’s what you can do ahead if you need to:

 

Sunday

Wash/dry greens and herbs

Make chicken or vegetable stock

Cook beans from scratch, if you aren’t buying canned

Make salad dressings

Cook quinoa

Seed pomegranates

 

 

Monday

Barbacoa tacos can be made today and refrigerated until tomorrow night. Just remove the hardened fat at the surface of the container and discard. Reheat in a large skillet or saucepan.

 

 

Thursday

Make the breadcrumb topping for cassoulet

  1. If your husband is Vegan what would he eat besides the Barbacoa? Since you are travelling is this what you would only make if you were home?

    • I am not traveling this week actually. My trip is at the end of February. If I were to make barbacoa, my husband would eat leftover vegan soup from the night before or I would doctor up some canned black beans and serve that with the barbacoa and slaw and he could make a black bean taco with the slaw. 🙂
