Dinner Planner: Week of June 19th, 2017

Happy Father’s Day!!  I hope you are all doing something wonderful to celebrate all the great dads out there!

It is officially summer in my house since Mr. Picky finished school this week.  Yippee!!  No more making lunches at either 9 o’clock at night or 6 o’clock in the morning!! Perfect timing as I have quite a few activities this week to keep me busy.

Wednesday, June 21st tune into The TODAY Show in the 8:00 hour for a cooking segment I am doing from my new cookbook! (The cooking segments are usually after 8:30 am.)

Thursday June 22nd 10:20-ish am I’ll be on KTLA in Los Angeles for more cooking from the book

12:45 pm PST I am cooking on Facebook Live with Catherine McCord from Weelicious!

7:00 pm Book party at Pages Bookstore, Manhattan Beach.  It’s a free event, but please RSVP.  Also, if you can’t get to Pages, but you’d still like a signed book, you can order from them and they’ll ship it to you!

Vegetarian Eggplant Meatballs Recipe

The book process is a long one and similar to online dating.  You parade yourself around vulnerably, putting your best assets forward, hoping the right companion will ask you for a date.  You might have to kiss a few frogs before you find Mr. Right and then you’re an item.  DaCapo Lifelong Books and I dated a bit before we got together in August of 2015 and the rest is history!

It is with much anticipation, excitement, and pride that I can finally announce that my new book, Kitchen Matters, has arrived!!!  In my last post, I compared writing a book to having a baby.  But in reality, this book was brewing for longer than a baby and this book was not for me, but for all of you!  I absolutely love teaching cooking classes and I wish I could see all of you in the kitchen.  Since that is not entirely possible, I wrote this book instead!

I’ve given birth to three children, and I still remember the feeling of anticipation right before they each arrived.  Maybe you have experienced the same — simultaneous waves of excitement, nervousness, joy and pride.  If you’ve hung around here long enough, you know that I am not about to have a baby, but instead a new book, my first.  And you know what?  It’s almost the same as having another baby!  Actually, my beautiful new book was delivered into my anxious hands last week and I could not be more excited and more proud for you to meet it!  The book is officially published this Tuesday and I hope you’ll do me the honor of ordering a copy (Amazon or a signed copy from my local bookstore.)  Makes a great graduation, teacher, or Father’s Day gift!

In the meantime, I have to be super organized the next few weeks.  I’m in New York the early part of this week and again next week.  Also, I have 2 LA events that you are invited to attend this week and then 2 more after this week:

When am I going to finally go to Thailand and eat their delicious food?  It is one of my favorite cuisines.  Suffice it to say I am definitely not going any time soon since I am in full book mode right now!  I don’t think I’ve mentioned in the last 5 minutes that my book is coming out on June 13th.  Or maybe I have.  Super excited!  But because I am scattered in a hundred, no a million, different directions right now, you can expect all future blogposts to be a little shorter than usual.

I just finished teaching a fabulous breakfast menu last month and these pancakes were a favorite!  I received a lot of great feedback from moms who made these for their kids and had success with even the most finicky eaters.  These pancakes check off all the important breakfast boxes for me:  protein, good fats, fiber/complex carbs.  I talk a lot about these three macro nutrients in my breakfast class every year to help answer the question, “what constitutes a good breakfast?” I actually have no problem with any food for breakfast –  soup, leftovers, a smoothie, a sandwich – provided it has all three of the above. The goal with my breakfast food is to fuel my brain, provide long-lasting energy until lunchtime, and keep my blood sugar stable.

I just taught my last scheduled class on Thursday until September so I can focus on my book and a project I am working on for Clean Eating Magazine.  I sent out an email to my subscribers with details about my upcoming book events, but here are a few with some more pending.  I’m working on a permanent events page for the blog, as well.  I hope to see you in person this summer!

Yippee!  It’s Copper River salmon season!  I love, love, love wild salmon, but the best of the bunch is Copper River, which is available for a very short time May through June.  It’s the most silky, rich salmon ever. It’s also the most expensive, but worth it, in my opinion.  In honor of the season, I am posting our new favorite bowl recipe.
