I am posting this week’s dinner planner a little early since I think most of you will not be shopping and organizing tomorrow, Mother’s Day!  At least I hope you get the day off.  My daughter is coming home from college this week and I could not be more excited!  She will be getting her hands dirty with me in the kitchen this summer since next year she will be off meal plan and will need to cook for herself.  You would think that all of my kids would be very competent in the kitchen, but think again!  😉

Here’s a great dinner plan for this week with suggestions for what you can prep ahead if you need to:

Meatless Monday:  Asparagus and artichoke frittata, green salad with Everyday Salad Dressing #1

Tuesday: Stuffed peppers with turkey and rice, cauli-mash

Wednesday:  Thai steak salad

Thursday:  Chipotle Black Bean and Rice Skillet from Naturally Ella (i’m going to skip the eggs)

Friday:  Grilled pineapple salad  (I’m going to omit the crushed plantain chips since I am making fresh plantains) with sautéed garlic shrimp (rinse, pat dry, seasons with salt, pepper, a little garlic powder and a pinch of chipotle powder, saute in a skillet in olive oil a few minutes on each side until pink and opaque,) sautéed plantains (the skins need to be black before using them.  Peel, cut thickly on an angle and sauté in coconut oil until caramelized on both sides.  Season with salt and pepper.  If you can’t find them, roasted sweet potato wedges would be nice here.)

Saturday:  Straciatella soup, grilled cheese sandwiches on sprouted bread with avocado and fresh baby spinach leaves

Sunday:  Roast chicken with carrots, fennel, onions and potatoes

 

Here’s what you can do ahead if you need to:

Sunday (or do all this Monday if you are relaxing on Mother’s Day)

Prep (wash, dry, chop) asparagus (you can even saute all the veggies for the frittata a day ahead)

Wash greens for salads

Make all dressings/vinaigrettes

Prep cauliflower for mash

Soak and cook black beans

Make stock for soup

Monday

skim fat from stock and freeze (click here for how to freeze stock)

Friday or Saturday

Salt the chicken

Prep veggies for roast chicken (cut potatoes must be submerged in water and refrigerated)

Defrost stock
